Spicy Garlic & Crab Glass Noodles

I was binge watching the Netflix Series “Street Food Asia” and came across an episode that featured the remarkable chef JayFai of Bangkok where she was showcasing her world famous crab omelette. I immediately went to the store and purchased some jumbo crab meat. While I was at the store, I was struck with an idea to create a dish that could combine the aspects of the omelette into a dish with glass noodles. Kimchi Fried Rice w/ Bacon + Shrimp

I have no idea what took me so long to post this recipe. I make kimchi fried rice pretty often but this version is a bit souped up because I added shrimp and bacon to give it my “s(e)oulful” twist. Kimchi fried rice has always been and will always be my favorite dish. The flavors that blend together in this dish really play well together and delivers an incredible experience. No back story is really needed here because, well there’s bacon in here, along with shrimp and an over easy egg but the real star is the fried kimchi.

Aperol Spritz w/ a Fall Twist

A few months ago I went on an epic vacation with my friends to Montenegro. We sailed around the coastal country for seven days living our best lives. We would dock daily in a new town and head out for exploration where we would inevitably stop for a drink at a cute cafe. Whenever we did that, I would always order an Aperol Spritz. Something about sipping on a spritz outdoors with a beautiful view of the sea really eased me into vacation mode. We all know how important breakfast is for our bodies. However, I’ll be the first to admit that I am terrible at being consistent with breakfast but on the flip side, I’m stellar when it’s time for brunch! :) This smoothie bowl is a go-to recipe for me, it’s super easy to make and it leaves me feeling full for hours. Right before I left for college. My Korean mother ushered me into the kitchen to learn first hand how to make kimchi. Looking back, i'm always so touched by mother's gesture. Don't get me wrong, kimchi is by far one of my favorite side dishes. But being this was my first time away from home, it wasn't the first thing on my mind.
